  • 3 heaping cups peach slices (about 23 medium peaches)
  • 1 cup blueberries
  • 1 Tablespoon granulated sugar
  • 1 Tablespoon almond flour, almond meal, or all-purpose flour

Instructions

  1. Prepare the dough by mixing flour, sugar, salt, and cutting in butter until crumbly. Stir in ice-cold water until moistened. Shape into a disk, wrap in plastic, and refrigerate for at least one hour.
  2. For the frangipane filling, beat softened butter with almond flour, sugar, an egg, almond extract, and vanilla until creamy; refrigerate.
  3. Toss peach slices and blueberries with sugar and almond flour; refrigerate.
  4. Preheat oven to 425°F (190°C). Roll out chilled dough into a circle on a floured surface. Spread frangipane over the center, leaving edges clear for folding. Top with fruit mixture.
  5. Fold edges over filling; brush with egg wash. Chill assembled galette for 20 minutes.
