  • 2 cups water
  • ½ cup milk
  • 2 cups sharp cheddar cheese (shredded, divided)

Instructions

  1. Season chicken cubes with salt and pepper. In a large pot, heat olive oil over medium-high heat and brown the chicken for about 5–7 minutes. Remove from pot.
  2. Sauté onions in the same pot until soft, then add garlic.
  3. Return chicken to the pot; add rinsed rice, chicken stock, and water. Bring to a boil, cover, and reduce heat to low.
  4. After 10 minutes, stir in broccoli; cover and cook until rice is done.
  5. Preheat oven to 425°F. Stir in milk and one cup of cheddar cheese until combined; top with remaining cheese.
