  • 1 cup sharp cheddar cheese (shredded)

  • ½ cup vegetarian Parmesan cheese (plus 2 tbsp, finely grated)
  • 2 teaspoons Italian seasoning
  • 1 cup Panko breadcrumbs
  • 2 tablespoons butter (melted)

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 1½ quart casserole dish.
  2. Sprinkle sliced zucchini with salt in a colander and let sit for at least 30 minutes to release moisture. Blot dry.
  3. In a mixing bowl, combine onion, eggs, cheddar, mozzarella, Parmesan, Italian seasoning, salt, and pepper.
  4. Layer zucchini in the prepared casserole dish and pour the cheesy mixture over it evenly.
  5. Bake uncovered for 20 minutes.
  6. Mix Panko breadcrumbs with melted butter; sprinkle on top of the casserole along with remaining cheddar cheese.
  7. Bake for another 20 minutes until bubbly and golden brown.
