Ingredients

- 1 large egg white
- 1/2 cup panko breadcrumbs
- 1/3 cup fine white cornmeal
- Vegetable oil (for frying)
- Coarse salt and spices (paprika, garlic powder, onion powder)
Instructions
- Make the remoulade sauce by whisking together all ingredients in a bowl; refrigerate.
- Slice tomatoes into 3/8" thick pieces and sprinkle with coarse salt; let sit for 30 minutes.
- Set up a breading station: combine flour and seasonings in one dish, mix buttermilk and egg white in another, and blend panko and cornmeal in a third.
- Bread each tomato slice by coating first in flour, then dipping in the buttermilk mixture, and finally rolling in the breadcrumb mixture.
- Allow coated slices to rest on a wire rack while heating oil in a cast iron skillet over medium-high heat until shimmering (about 350°F).
- Fry tomato slices in batches until golden brown (about 3–5 minutes per side). Drain on paper towels before serving.
