  • 2 large Heirloom Tomatoes
  • 2 tsp. Extra Virgin Olive Oil
  • pinch flaky Sea Salt
  • pinch freshly cracked Black Pepper
  • 1 cup fresh Arugula
  • 1/3 cup Creamy Feta Sauce
  • 2 tbsp. Balsamic Dressing
  • 1/4 cup Panko Breadcrumbs
  • 1/2 tsp. Italian Seasoning

Instructions

  1. Slice the stem ends off the heirloom tomatoes and cut them into 1/2" thick slices. Arrange on a platter, sprinkle with sea salt and pepper, then drizzle with olive oil. Let marinate for at least 15 minutes.
  2. Prepare the whipped feta by blending creamy feta cheese with olive oil until smooth.
  3. Toast panko breadcrumbs in a small pan with olive oil and Italian seasoning until golden brown.
