  • 2 cans (10 oz each) Rotel or diced tomatoes with green chilis
  • 1 packet taco seasoning
  • 2 boxes (8.5 oz each) Jiffy Corn Muffin Mix
  • 2 eggs
  • ½ cup milk
  • 1½ cups sour cream (divided)
  • 2 cups Sharp Cheddar cheese (grated, divided)
  • 1 cup Pepper Jack cheese (grated)
  • Toppings: shredded lettuce, black olives (optional), salsa, cilantro

Instructions

  1. Preheat oven to 350°F.
  2. In a large skillet, brown the ground beef over medium heat; drain excess fat.
  3. Stir in taco seasoning with half the recommended water; cook until the liquid evaporates.
  4. In a bowl, mix Jiffy Corn Muffin Mix with eggs, milk, and half a cup of sour cream until combined.
  5. Spray a baking dish with non-stick spray; layer cooked beef followed by drained tomatoes and pour cornbread mix on top.
  6. Add cheese layers and bake for 35–40 minutes until firm.
  7. Cool for 15 minutes before slicing; top with remaining sour cream and desired toppings.
