  • 2 Tbsp. honey
  • 8 oz. fresh mozzarella balls
  • 8 oz. grape tomatoes
  • 2 garlic cloves, minced
  • Fresh basil, chopped
  • Olive oil
  • Kosher salt
  • Pepper

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, whisk together balsamic vinegar, honey, olive oil, minced garlic, Italian seasoning, salt, and pepper.
  3. Toss grape tomatoes and mozzarella with chopped basil; season and set aside.
  4. Heat oil in an oven-safe skillet over medium-high heat; season chicken with salt and pepper.
  5. Cook chicken until golden brown on both sides (about 1-2 minutes each).
  6. Pour balsamic sauce over the chicken; let simmer briefly.
