  • 2 garlic cloves
  • 1 cup water (divided)
  • ⅓ cup granulated sugar
  • 1 tsp balsamic vinegar
  • 1 tsp white vinegar
  • ¼ tsp nigella seeds/kalonji
  • ¼ tsp black pepper (to taste)
  • ¼ tsp salt (to taste)
  • 2 tsp cornflour/cornstarch
  • ½ tsp fresh lemon juice

Instructions

  1. Peel and roughly chop the onion and garlic. Blend until smooth. Strain through a muslin cloth to extract juice.
  2. In a saucepan over medium heat, combine the extracted juice with ¾ cup water, sugar, salt, white vinegar, balsamic vinegar, black pepper, and nigella seeds. Bring to a boil until the sugar dissolves.
  3. In a separate bowl, whisk together the remaining ¼ cup water and cornflour until smooth. Gradually add it to the saucepan while stirring continuously until thickened.
  4. Remove from heat and stir in lemon juice. Let cool before transferring to an airtight container.
