Ingredients

- 2 garlic cloves
- 1 cup water (divided)
- ⅓ cup granulated sugar

- 1 tsp white vinegar
- ¼ tsp nigella seeds/kalonji
- ¼ tsp black pepper (to taste)
- ¼ tsp salt (to taste)
- 2 tsp cornflour/cornstarch
- ½ tsp fresh lemon juice
Instructions
- Peel and roughly chop the onion and garlic. Blend until smooth. Strain through a muslin cloth to extract juice.
- In a saucepan over medium heat, combine the extracted juice with ¾ cup water, sugar, salt, white vinegar, balsamic vinegar, black pepper, and nigella seeds. Bring to a boil until the sugar dissolves.
- In a separate bowl, whisk together the remaining ¼ cup water and cornflour until smooth. Gradually add it to the saucepan while stirring continuously until thickened.
- Remove from heat and stir in lemon juice. Let cool before transferring to an airtight container.
